Here is tonight’s evening drink. Fujimoto Shuzo‘s Shinkai “Attempted Sake Koji Mashimashi“.
The phrase “Attempted Sake Koji Mashimashi” is quite catchy, isn’t it?
By the way, the label says something even more amazing. The “Sake Degree” is -15.0. This is also a very heavy sweetness.
When I put it in my mouth, I was afraid to try it… What? It’s sweet, but very easy to drink.
The store’s explanation is as follows.
The amount of koji used is usually around 20%, but this “Attempted Sake” uses nearly 70%. By using a lot of koji, which produces sweetness, it gives it a rich, complex flavor and sweetness!
Basically, if you’re drinking it with a meal, it’s on the rocks with more ice. Or, if it’s after a meal, it’s well chilled as a dessert wine.
It is not very peculiar and is sweet enough for everyone, so both are possible.
It is a very unusual sake, but I heard it was a “Attempted Sake” to begin with.
