Tonight’s ShigaSake is here. Kita Shuzo’s Kirakucho “Arabashiri”.
The first impression of the fragrance is a “Taoyaka” scent.
As the label says, “Taoyaka” is the kind of sake that Kirakucho aims for.
It describes the characteristics of the sake and may mean something like smooth, mellow, elegant, etc. I think that is a very good word.
The mouthfeel is mellow and smooth.
The taste is well-balanced, with moderate acidity and spiciness mixed in with the umami of the rice.
When swallowed, it is a little less sweet and leaves a crisp, refreshing aftertaste.
Incidentally, even when heated, the balance of flavor is not lost, and it tastes even better as it is. It seems to go well with all kinds of food.
Easy to drink and tasty, it is a “Taoyaka” sake.
