Tonight’s ShigaSake is Tomita shuzo’s ShichihonYari “Junmai Tamasakae”.
It is a Junmai version of the ShichihonYari “Junmai Ginjo Tamakae” I had before. I am looking forward to it.
I enjoyed it well chilled.
The first impression of the fragrance is still cool and sharp. It is very similar to Junmai Ginjo, but the aroma is a little more robust.
When I drink it, it is light, clean and dry. The clean spiciness creates a sense of clarity.
And it seems to me that the flavor of Tamasakae is stronger than that of Junmai Ginjo.
This taste and mouthfeel may be a common characteristic of Tomita Shuzo or ShichihonYari.
The spiciness is just right, so I can easily enjoy many glasses. It seems to go well with any dish, but I wish I could eat oden, haha.
Next, I had a glass of heated sake, which was as expected.
The flavor changes to a more mellow taste, and the umami is perceived to have increased.
Especially in the cold season, this heated sake and nabe dishes are the best.
