Here is the second ShigaSake of the year. This is BiwanoChoju “Junmai Ginjo” by Ikemoto Shuzo.
Now I’m going to taste it right! haha.
First of all, the aroma is a gentle, fruity, elegant ginjo aroma. I imagine it must be a refreshing sake.
And the actual mouthfeel is very smooth, with a slightly fruity, gentle sweetness. It is also light in flavor.
The spiciness and acidity complement the delicious rice flavor and sweetness, much like how I feel when I drink “junmai-shu”.
It is also refreshing and smart. I feel it has a beautiful aftertaste.
This “BiwanoChoju”, last time I drank “Junmai-shu” and today I drank “Junmai Ginjo“.
The only difference on the label is the “70%” and “60%” rice polishing ratio. But even the same delicious sake tastes very different.
Both are very tasty, but the “Junmai-shu” has a richer flavor, stronger aroma, more robust or punchy, and full-bodied. “Junmai Ginjo”, on the other hand, is delicate, elegant, and refreshing.
Of course it depends on the person, but I think “Junmai Ginjo” would score better as a gift, and “Junmai-shu” if I were to drink it myself? ,haha.
Both are good drinks.
