Tonight’s evening drink is Yamaji Shuzo’s HokkokuKaido “Junmai ”.
Last time I had the HokkokuKaido “Junmai Ginjo” which reminded me of yogurt, how about this one?
The first thing to note is the aroma, which is a full, pleasant aroma of rice that is typical of sake. Is it orthodox, a change from the last time? haha.
And when I take a sip, it is mellow for a moment, but soon after, it has the delicious taste of Tamasakae. And then comes the spiciness.
The flavor of this rice is very rich. I think it is very tasty, with a firm body with a bit of fermentation.
When swallowed slowly after tasting Tamasakae in the mouth, it comes with a tangy taste for a moment and then disappears with a sharp taste.
It is quite a strike zone for me. I like it.
Since I was in the mood, I also tried it warmed up.
and this, as expected, became even more mellow and easier to drink.
However, the individuality and unique flavor of this sake that I felt when it was cold was reduced by warming it up. It came close to what is called normal heated sake.
Personally, I prefer cold sake. But it is a very tasty sake.
