Tonight’s evening drink is Yao Shuzo’s SuzuMasamune “Junmai Daiginjo PINK”.
Like the “Junmai Ginjo Paradise” I drank last time, this sake is also a 4-year aged sake for the 2019-2020 year.
This sake surprised me the most this year.
As it is a junmai daiginjo, I was expecting a ginjo aroma, but the aroma is sweet, truly gorgeous and fruity.
I thought the fragrance was better than I had imagined, and I would say it was one of the best in this price range.
And the mouthfeel is refreshingly sweet. But it is also well acidic, so it is not too sweet.
It is a sweet sake, but as I savor it slowly, it gradually becomes spicier and richer, and the sweetness decreases in my mouth.
When swallowed after a thorough taste, the initial sweetness has disappeared, leaving a refreshing aftertaste.
This is the depth and interest of sake. Wonderful!
Lately I am turning into a lover of dry sake. But originally, “sweet, sour, and fruity” were my favorite criteria for sake, so this sake is great!
Truly, “Shiga sake is a treasure trove”. I can’t stop searching for treasures every day.
