(57) Dohkan “TomizuZikomi”

Tonight’s evening drink is here. This is OhtaShuzo’s Dohkan “TomizuZikomi TokubetsuJunmai Nama Gensyu”.

In brief, TomizuZikomi is a method of brewing sake in a ratio of “100 rice:100 water” instead of the usual ratio of “100 rice:120 water”.

In other words, the amount of water used is 10/12, resulting in a richer flavor and sweeter taste with less water.

Therefore, it is safe to assume that TomizuZikomi is a dark and sweet sake.

I took a sip of it right away, the first aroma is sweet. It smells good, but I have a feeling it will be strong and sweet.

One sip and it is as sweet as one would expect. I would say that it feels very rich and sweet, because I can feel the flavor of the rice there at the same time.

However, it is not only sweet, but also adds just the right amount of spiciness and acidity, keeping the drinkability well in line with its sweetness.

This is the wonderful and interesting part of sake. It is a sweet but very tasty sake.

This sake has a dark, sweet flavor, so it is not a food sake that can be used to complement any meal.

I would enjoy a couple of drinks before or after dinner. That’s too much to drink, haha.
