Tonight’s evening drink is Tomita Shuzo’s ShichihonYari “Junmai 80% Hiire”.
It is just a personal preference, but a lower “rice polishing ratio” raises expectations before drinking.
”Junmai” rather than “Ginjo”. I may say that I am a Junmai-ist.
So, I put the glass close to my face, I smelled a cool aroma with a bit of sharpness.
A sip of the sake is clean and refreshing, matching the aroma.
And the moderate acidity and spiciness flow smoothly together. It’s a clear, dry sake.
Before drinking it, I had taken the liberty of imagining it to be like doburoku, which was unexpected.
However, this is a wonderful sake with a clean, clear taste that simply conveys the flavor of the rice.
With a rice polishing ratio of 80%, this clean, dry sake is indeed of a high level.
It is so delicious. I’m afraid I’m sorry.
