Tonight’s evening drink is Nakazawa Shuzo’s Kazuhiro “Kimoto Junmai Hiire”.
Following Matsunotsukasa “Kimoto Junmaisyu” the day before, this is the second consecutive day of “Kimoto Junmai” sake.
I look forward to comparing the two drinks to see how their personalities differ.
The first impression of the fragrance is a slightly weighty image of the power of “KimotoDukuri”. I thought it was a tough drink, haha.
When I took a sip, I thought it was mild on the palate only for a moment, and then the spiciness with a strong sourness soon arrived.
The label says “SakeDegree: 0”, but it seems quite spicy for that. This may be because “acidity: 2.5” is quite high.
In the mouth, the flavor of rice with a sense of fermentation expands. It has a strong rice flavor that is typical of “KimotoDukuri”. Very nice.
The throat is firm and acidic, but with a crisp finish.
I would not drink it with sake alone, but would want to pair it with a hot dish. It’s such a delicious drink.
“MatsunoTsukasa” and “Kazuhiro”. Both are delicious “Kimoto Junmai” as I found out by comparing them.
