Tonight’s evening drink is Mochiduki Shuzo’s Suzukabuto “Junmai Ginjo NamaZake”.
The first impression of the fragrance is a bit sharp, as if it were cool.
Sake Degree: +4, Acidity: 2.0, so I imagined it would be dry, but it was quite mellow on the palate, with no tingling sensation at all. Numbers are unreliable, haha.
Even so, the spiciness comes through in the mouth. However, the umami of the rice that is felt along with the spiciness is very good.
The dry taste is still a little irritating, but the aftertaste is refreshing.
It is a sake that seems to go perfectly with all kinds of food.
As a side note, this sake has the same Rice, Alc, Sake Degree, and Acidity as the “Daijiro Junmai NamaZake” that I drank yesterday. The only difference is the 5% rice polishing ratio.
It makes me think, “They are both delicious sakes, yet so different in flavor, spiciness, and aroma.”
ShigaSake is very interesting. It is deep.
