Tonight’s evening drink is HataShuzo’s Daijiro “Junmai NamaZake”.
The first thing I notice is the soft aroma, which is very typical of sake.
And when I take a sip, the mouthfeel is very mild and slips easily into my mouth.
The label says “Sake Degree:+4” and “Acidity:2.0”, but it does not seem so dry. The umami of “Ginfubuki” may be suppressing the dryness.
In the mouth, the spiciness and acidity come on gradually, but they are not too stimulating and are well harmonized with the umami of the rice.
The moment of thirst-quenching comes with a slight tanginess, but the aftertaste is clean and crisp with a spicy aftertaste.
It is a very delicious sake with a good balance of umami, spiciness and acidity.
