Tonight’s sake is Hagukumi “Junmai NamaZake” made by students of Shiga University. Brewed by Kitajima Shuzo.
Since it is released once a year in March, I was looking forward to next year’s release, but I found one bottle of last year’s edition left and bought it.
The first impression is a gentle fragrance that is a bit cool.
When I drank it before, I thought it was more spectacular, perhaps because it was outdoors on a beautiful day, but it was more subdued than that.
On the palate, the mouthfeel is mild and hardly irritating.
When tasted in the mouth, the mild spiciness and acidity come a little later, but the drink is quite sweet.
The throat is smooth and clean. A slight spiciness brings a refreshing coolness. It is very easy to drink.
It is a cool, light-tasting sake that is better as an aperitif than as a mid-meal sake.
While I’m at it, the 2025 edition will be here. I am very much looking forward to it.
