Tonight’s evening drink is Sato Shuzo’s Kohama “Junmai Ginjo Muroka Gensyu Hiyaoroshi”.
I have an image that hiyaoroshi is junmai sake to be drunk warmed, but this sake is different.
The label says, “Enjoy chilled or on the rocks with ice”. I like it.
When served well chilled in a glass, the first thing that struck me was its gentle and pleasant aroma, which gave the impression of being a little refreshing.
The mouthfeel is even more mellow and delicious than expected. The spiciness comes first, followed by sourness.
It is easy to drink with just the right amount of spiciness and acidity.
The moment of throat clearing, when the spiciness comes rather firmly, makes me realize that it is still a dry sake.
The label says “well-balanced, mellow flavor,” and I think it is true. It is a well-balanced moderately dry sake.
