Tonight’s evening drink is Kita Shuzo’s Gonza “Junmai Ginjo NamaZake”.
There is a rice field on the small island of Nishinoko in Omihachiman City on the southeast side of Lake Biwa.The rice field is called “Gonza”.
The sake “Gonza” is made by brewing the Wataribune No. 6 harvested there. You can see how rare it is.

When I tried it, the first thing I noticed was a full-bodied aroma typical of sake.
The mouthfeel is mellow, but the delicious flavor of the rice comes suddenly and with a bang. This is amazing!
The strong umami also gives a sense of sweetness, which is probably why the spiciness and acidity are quite mild.
When I swallow it, I feel like I am drinking thick rice juice. Also, the aftertaste is dominated by the umami. Delicious!

Personally, my strike zone. It’s a very dark, very good sake.
