Tonight’s evening sake is FukuiYahei shoten’s HaginoTsuyu “Kimoto Tokubetsu Junmai”.
This is a “Kimoto Junmai” sake. However, it has a rather gentle and refreshing aroma, and I imagined it to have a medium-sweet taste.
In fact, the “Junmai Daiginjo” with the same label that I had previously drank was refreshing and very tasty, so I thought it would have a similar taste.
However, when I took a sip, I thought it would be mild, but it was tangy and strong acidity.
I thought sweetness would follow, but it did not, haha.
What came was a firm dryness. As expected of “Kimoto Junmai”, it was a very dry sake.
In the mouth, the rich umami of rice is matched by a crisp, dry taste. Well, it is a good sake!
And since it was “Kimoto Junmai”, I also tried it heated.
The spiciness and acidity become mellower, and the umami of the rice increases. I also like it warmed up.
Today’s dishes included sashimi and yuzu daikon, and I have no complaints about the delicious sake and food.
