Tonight’s evening drink is here. This is YaoShuzo’s SuzuMasamune “Junmai Ginjo Paradise”.
It is labeled Junmai Ginjo, but the rice is polished to 50%, which means it is Daiginjo class.
My first impression was a gentle and mild aroma. It was soft and mellow on the palate.
On the palate, I can detect a distinctive rice flavor that seems a bit fermented, with just the right amount of acidity and sweetness.
The spiciness gradually increases in the latter half. When swallowed, the spiciness quickly rushes through.
The aftertaste is clean. I feel it has a good sharpness.
Looking at the label again, it reads “2019-2020 rice, produced on 10/05/2020, shipped 10/2024. That means “laid aside for 4 full years.”
If so, it seems to have a slightly old sake feel to it, and I think it is a good sake that took a lot of time and effort to make.
