(23) ShichihonYari “Junmai Ginjo”

Tonight’s evening drink is here. This is Tomitashuzo’s ShichihonYari “Junmai Ginjo”.

The label says “Junmai Ginjo-shu,” but the rice polishing ratio is 50%. It is a so-called daiginjo-class sake.

When I put my face close to the glass, the first thing that hits my nose is the mild, ginjo-shu-like aroma.

In the mouth, I find a pleasantly well-balanced rice flavor that is neither spicy nor sweet.

The umami that is felt in the mouth is combined with the acidity that comes up later.

As I swallow the integrated umami and acidity, I feel tangy only for that brief moment. Then the lingering rice flavor slowly fades away.

This sake was served with scallops, tuna sashimi, and eggplant stew.

The glasses are emptied one after another. It’s a good drink. It’s going to run out soon.
