Tonight’s evening drink is here. This is OhtaShuzo’s Dohkan “Hiyaoroshi Junmai Gensyu Fujikura”.
Today is another “hiyaoroshi”, and I will drink it cold, as I did last time.
“Junmai Genshu Shiga Yamadanishiki”. The label expresses the strength of the rice.
The first impression is a nice aroma of rice that reminds me of a bit of fermentation. This is good.
I take a sip and the spiciness comes with the mouthfeel. It is not the sweet type.
The umami of the rice continues firmly in the mouth, with alternating spiciness and acidity.
This feeling is also connected to the throat, bringing power and sharpness to the sake.
The unique rice flavor and spiciness linger on, leaving a lingering taste.
In total, this sake stands out for its powerful rice flavor.
I would like to try it hot. It is a good sake.
