Tonight’s evening drink is here. This is SatoShuzo’s Kohama “Tokubetsu Junmai Syu”.
Both the bottle and the label are neat, with black and white as the base color.
When I opened the cap and put my face close to it, it smelled sharp. It didn’t feel sweet.
The “GI Shiga” mark at the top.
”GI” stands for ‘Geographical Indication’ and is a labeling mark for alcoholic beverages certified by the National Tax Administration Agency.
In the case of Shiga, the conditions include the use of rice and water from the prefecture.
It means “Shiga sake made with local ingredients”.
The mark is shaped to resemble Shiga Prefecture and a grain of rice. The polka dots are in the shape of Lake Biwa.
It is fashionable and nice.
As for the taste, the initial mouthfeel is alternating between the umami of rice and the hard spiciness.
It has a tangy feeling that goes down the throat, and a lingering aftertaste that is both delicious and bitterly spicy.
There is no “sake degree” on the label, but I suspect it is quite high.
The label also says, “You can enjoy its synergistic flavor with cheese and meat dishes”.
It means, “This drink won’t be outclassed by a full-bodied red wine.”
I would like to try it with gorgonzola, or maybe even hot. It is a very hard tasting bottle.
